Abstract

The paper proposes the installation of a device for deboning and trimming of meat raw materials with a high-energy jet of water to improve quality indicators, increase productivity and reduce the labor intensity of the production process. When implementing the method, meat raw materials are exposed to a high-energy jet of water under supersonic pressure.
